One Ingredient Ice Cream

Yes, that's right; you heard us. Creamy, soft-serve style ice cream with just one ingredient — and no ice cream maker needed! What is this one magic ingredient that can be whipped into perfectly rich and silky ice cream, with no additional dairy, sweeteners, or ingredients needed whatsoever?

If you guessed BANANA, congratulations! You're right!


What? You didn't know that bananas can make some of the best ice cream? Well, I didn't either until last week, when my sister called me up and mentioned that she's been freezing bananas and then pureeing them into ice cream.

"That's the sort of thing you discover," she sighed, "when all your friends are vegan, gluten-free, dairy-allergic, and you're on a sugar-free diet." I'd deal with a list of dietary restrictions twice as long, though, if it meant discovering more treats like this one.

It turns out that frozen bananas are good for more than just dipping in chocolate. If you freeze a banana until solid, then whiz it up in a blender or food processor, it gets creamy and a little gooey, just like good custard ice cream. I was surprised at this bit of kitchen wizardry; I assumed that a blended banana would be flaky or icy. But no — it makes creamy, rich ice cream.


Some bananas, depending on their ripeness, have a bit of that green aftertaste. My sister has been experimenting with adding in another ingredient or two, like a tablespoon of peanut butter and another of honey. Delicious!

E505/F401: Leadership & Administration of Early Childhood Programs (3 credits) Second Summer Session June 16 – August 12, 2011 Taught by Dr. Peggy Apple


Course Description
What does it take to be an effective leader? What is involved in leadership, management, and supervision? Who is a teacher-leader? How do leaders and administrators contribute to quality environments and programs for infants, toddlers, and young children? Enroll in this online course for an exploration of effective relationship-based leadership strategies, intentional management techniques, quality standards, ethical frameworks, and continuous quality improvement paradigms as they relate to early childhood programs that serve infants and toddlers. This course will examine the management, supervision, and leadership of early childhood programs that serve children from infancy through age eight within the framework of planning, implementing, and evaluating programs of various sponsorship and purpose. Topics will include program philosophy, goals, curriculum, leading and managing staff, differentiated supervision, ethics, professional development, physical facilities, finance and budget, family and community partnerships, government regulations, and accreditation systems, in addition to other relevant leadership and administrative topics. The culminating project is individualized individual learning goals set by the participant as they relate to course objectives.

E508/F401: Infant and Toddler Care and Education Environments (3 credits) Intensive Summer Session July 5 – August 5, 2011 Taught by Dr. Mary McMullen

Course Description
Join us for an exploration of optimal care and education environments for infants and toddlers.

Current infant and toddler caregivers, early interventionists, early childhood administrators, trainers, consultants, as well as those interested in learning more about the complexities of infant and toddler care and education environments are encouraged to enroll. This course is designed for practitioners and students who are interested in the study of infant and toddler care and education. The two major themes of this course are 1) The Physical Aspects of Environments for Infants and Toddlers and 2) The Human Relationship Elements of the Environment. Elements necessary for the promotion of overall healthy growth, learning and well-being in infants and toddlers will be examined in an online format through lecture, readings, discussion, and individual projects. Analysis of relevant readings, resources, and research will help participants improve their current practices and/or engage in further professional development and learning about infants and toddlers.

"Explore Indy" With the Freewheeling' Bike Club

Take a ride with neighbors of all ages to interesting places around Indy. Freewheelin' Bikes will show you fun places to go and great ways to get there! The distances start short and grow week by week to increase fitness. Be amazed at how far you can ride by the end of the summer! Our rides are designed with kids age 10-15 and less fit or experienced adult riders in mind. Youngsters 8 and up may ride with us if accompanied by an adult. This is a great family bonding opportunity! PLEASE SIGN UP IN ADVANCE and plan to ride with us regularly. Registration is $15/person (max $45/family).  You may also rent a suitable, working bike from them for the entire ride season for $25/person.
